The old part of Takayama is the most overrated historical town in Japan and overall quite boring. The historical part consists of only a few little streets but the city apparently has invested a lot into advertisement. It is packed with hordes of clueless tourists during the daytime, aimlessly walking around and spending their money in the overpriced "artisan" shops. Of course, there are famous temples in the city, but there are famous temples in many places around Japan. I suggest taking a short (20 min) train trip to the nearby town Hida-Furukawa. Much more authentic experience with beautiful small canals and thousands of koi carp swimming in them and almost no tourists. Also, if you want to see what the real towns looked like during the Edo period, take a train to Matsumoto and go south from there, and visit the historical post-towns in the Kiso Valley, along the historical Nakasendo trail that used to connect Edo (Tokyo) and Kyoto. Those are the towns of Narai-juku (a 1-kilometer-long street with authentic historical Edo houses straight from the movie set of Akira Kurosawa and real authentic artisan workshops along the street), Tsumago-juku and Magome-juku (there is a famous hiking trail on the Nakasendo between Tsumago and Magome). Another beautiful town worth visiting is in Gifu prefecture, called Mino-shi, which is famous for its hundred-year-old washi paper manufacturing and lantern festival. And if you happen to be somewhere around Okayama or Hiroshima, make sure to pay a visit to the gorgeous historical town of Kurashiki, also called "the Venice of Japan", famous for its canals and historical warehouses.
